KABANOSY (Polish Meat Stick): OUR OWN Fully Cooked Ready to Eat Snack Stick. Stuffed in a natural casing and slow smoked for hours. The world's finest meat stick! For deeper & more intense flavor continue to dry in your refrigerator in a paper bag for one-two weeks (if you can wait that long!).

: OUR OWN "Thick Cut" Tradditional Brown Sugar Cured, Hickory Smoked BACON: $8.99/lb This bacon is brown sugar cured in a wet brine for over a week and then Hickory Smoked all day. Vacuum packaged in approximately one pound packages. 

SLAB BACONWHOLE Slabs available by special order $6.99/lb (full slab 10-12 LB average) Jowl Bacon also available from time to time. Slabs are cut to your specification or left whole. We typically have smaller pieces on hand for those only needing a couple of pounds.  Also, available is bacon ends and pieces for $4.49/lb - excellent in baked beans, and soups.

Approximately one pound vacuum packages. This bacon is hand rubbed with a special blend of cure & dry cured for two weeks with NO water added and then Hickory Smoked all day. An awesome balance of sweet, salty and smokey flavor. It's a time consuming process, but the finished product is well worth the wait. Most commercial bacon is pumped with a salty brine solution including phosphates and then liquid smoked the same day in huge batches. All of our products are made in small batches with extra attention to detail and taste.

FRESH ITALIAN SAUSAGE: Cheese & Parsley Pork Sausage. Hickory Hill Smokehouse is the only place you will find this unique sausage made in Upstate NY! This is an "old-school" Italian recipe dating back many generations. Every pork butt is carefully hand-trimmed and seasoned with the freshest seasonings and imported cheese and then stuffed into natural hog or sheep casings. This sausage is amazing on the grill or simmered & cooked in your favorite marinara or Sunday gravy!

Hickory Hill Smokehouse is a small family run business located off the beaten path in rural western Schenectady County, New York. Just 20 minutes West of Rotterdam Five Corners and only 20 minutes South of the City of Amsterdam and 25 minutes East of Cobleskill (please click on contact us for directions). Our processisng facility is New York State Inspected and Licensed. In addition to our own strict quality monitoring and food safety standards, we undergo routine inspections by New York State. 
All of our meats are naturally smoked onsite in our state of the art, stainless steel smoker. We only use the finest and freshest cuts of USDA Inspected meats to make our products and support the local economy by buying local whenever possible.  

Our smoked cheeses are handcut from the highest quality cheeses. We smoke New York State Aged X-Sharp Cheddar, and Imported Danish Blue Cheese (quantities and availability varies).

We ship most of our products throughout the continental USA. Meats require overnight shipping & special insulated packaging. Please contact us directly if you would like to place an order.
