In addition to our brisket burgers, we will be offering hand-pressed 8oz. bacon-cheddar-burgers. Made from the finest cuts of beef blended with our signature hickory smoked bacon! Not your ordinary burger!

We introduced a new maple breakfast sausage in honor of NY’s maple season. In response to so many request for hot dogs, we will now be making our own natural casing, country style hickory smoked frankfurters! We offer two kinds: Traditional and Jalapeno & Cheddar.

Not too soon to start planning for your Easter dinner! Every year we make a limited number of Hickory Smoked skinless, shankless hams! If you have had one before, you know they are a treat! Send us an email or give us a call to get your name on a list sooner than later – we sell out every time!
New this winter is our lightly smoked CAPICOLA hams! Spicy and delicious, handcrafted and seasoned with an old family recipe!
We’ve had a very busy summer and enjoyed meeting many new customers. Our cheese and parsley pork sausage and all natural beef was a big hit for the grilling season. We will continue to offer fresh sausage and steaks, including our gourmet brisket burgers throughout the fall and winter.
We’ve been busy testing new snack stick recipes and now offer a Dill Pickle fully cooked snack stick made from pork and beef! If you like dill pickles this is a must try! We’ve also added a new dry cured bacon “Black Forest” bacon…..a new and unique flavored bacon reminiscent of the Black Forest region of Germany. Over the next couple of months we will be adding a few new flavors of bacon like Southwest (a little spicy), honey rubbed bacon, and a few surprises! Attention Farmers: While we custom smoke and process throughout the year, the fall time is especially busy for us. Farmers who would like their hams and bacons smoked, please call to scheduled a drop off time. Typical turnaround time is approximately one week. Thank you!
After searching and taste testing a variety of fresh beef, we now offer throughout the year ALL NATURAL ANGUS beef, NEVER any added Hormones or Antibiotics! We will routinely keep in our meat case or freezer, boneless ribeye steaks. Additionally, we will offer tenderloin filets cut into steaks (or whole by request). If you would like to order a whole or half of ribeye for roasting please give us a call or message us on Facebook.
Yes! We found the best gourmet burgers on the market and are now offering a special blend of meat consisting of Chuck, Brisket & Short Rib! Juicy and full of flavor! Why brisket? Brisket fat has a higher melting point than any other cut of beef and therefore, you end up with a burger full of flavor! Packed in four 8 oz patties per package. We will keep these burgers on hand all year 🙂
The Easter Hams are done smoking and the NYS Maple season is coming to a close. The maple dry cured bacon was a big hit and will be offered on a limited basis throughout the year, mainly in the winter/spring. Once again, we sold out of our hickory smoked bone-in hams. We also offer smoked petite sweetheart hams throughout the year. The sweetheart hams are boneless and weigh approximately 2-3/lbs each just enough for 2-4 people.

With the New York State maple season right around the corner, we will be offering for a limited time MAPLE DRY CURED BACON! That’s right, maple dry cured bacon made the old-fashioned way. Fresh pork bellies are rubbed with maple sugar, salt and cure and remain under refrigeration until fully cured. This special bacon will be available beginning Mid-March 2019 until sold out! If you would like some reserved, please call and let us know.
Additionally, we will also be featuring a limited quantity of MAPLE SNACK STICKS during New York’s maple season!
Easter Hams will again be available this year; please call and order yours by the first week of April to ensure you will have one reserved for your Holiday dinner. Whole and half hams available this year!
Fall has arrived and our shop is getting geared up for a busy season. Look for the smokin’ chimney and you’ll be sure to smell the Hickory smoke drifting down the road.
We will be taking orders for Holiday Hams. These are old-fashioned brown sugar cured, semi-boneless hams averaging about 16/lbs to 18/lbs each. If you are interested in ordering one, please call or email us and we will add your name to our list. If you know you would like one, please don’t wait to order, we make a limited number each holiday.
We will continue to smoke cheddar cheese curds and our famous smoked danish blue cheese this fall. Additionally, we carry a wide variety of local cheeses from Palatine Cheese! Stop by for a sample, we’re open every weekend throughout the year.
